Known for its vibrant green colour, refined sweetness, and remarkably low bitterness, it offers a smooth, full-bodied experience that lingers with depth and clarity.

Saemidori vs Other Cultivars

• Sweeter Profile: Compared to Tsuyuhikari, Seimei, Okumidori, and Kanayamidori, Saemidori has a richer and sweeter flavour with less bitterness, ideal for those who prefer a more indulgent matcha.
• More Creamy: Unlike most of other cultivars, Saemidori stands out for its rich, creamy texture and pronounced sweetness. That said, proper whisking is essential for achieving a creamy froth.
• Umami Richness: Saemidori features a high umami taste, more pronounced than Tsuyuhikari and Seimei. Okumidori also has a balanced umami, but Saemidori’s umami is slightly more pronounced. Compared to Kanayamidori, Saemidori's umami is smoother and less intense, providing a fuller-bodied and more savoury matcha experience.

Steeping Suggestions

• Put 2g of matcha (for a lighter tea) or 4g (for a stronger tea) into 60-70 mL of hot water (70-80ºC).
• Whisk in the matcha until fully dissolved and foamy.
  
• Add more water and sweetener if desired.
• Enjoy it hot or cold with your choice of dairy or non-dairy alternative.
