Creamy (top): smooth, rounded, velvety on the tongue. Best drunk straight or in cold lattes.

How Gina built the chart

Every blend and cultivar was tasted side by side as usucha (no milk), scored for texture and body, then plotted. The point isn't grade or price; two products at the same price can sit at opposite corners. It's a map of taste, so you can buy by the cup you actually want.

The clearest contrast to taste back to back: Samidori (bright, sweet, creamy) versus Okumidori (deep, robust, savoury). Run them side by side as usucha and the whole idea of "matcha flavour" opens up. Tsuyuhikari sits between them, with high umami but a lighter body. For a change of region entirely, Yabukita from Shizuoka brings a deep, vegetal, clean-finishing character that's genuinely different from anything grown in Yame.

Premium (Superior), from Uji, sits a step above culinary grade: light, refined, with a gentle aroma and clean umami, good for lattes, iced drinks and premium culinary use where you don't need the vivid colour or intensity of a ceremonial blend. Premium (Uji) is our genuine entry-level option, made from 2nd and 3rd harvest leaf. It's not intended for ceremonial use, and we say so plainly on the product page: it's more robust, less vibrant, and built for baking, smoothies and cost-conscious everyday use, not for drinking straight.

The Tsujirihei Honten Exclusive Collection

Beyond the chart entirely. Both are 2026 first-harvest Yame matcha and both sit at the top of our internal quality scoring, but they come from different cultivars. Gokou Cultivar is our highest-scoring matcha overall: silky, full-bodied, with deep roasted umami and a hint of chocolate. Koko Edition is made from Saemidori: rounder, creamier, with a natural sweetness that's gentler than Gokou. If you want the single richest cup we make, choose Gokou. If you want something equally premium but a touch softer, choose Koko Edition.
No. Premium (Uji) is our entry-level, culinary-grade matcha, made from 2nd and 3rd harvest leaf. It's a genuinely useful product for baking, smoothies and cost-conscious everyday use, but it is not intended for ceremonial drinking. If you want a step up that's still budget-friendly, Premium (Superior) sits above culinary grade with a lighter, cleaner cup. For ceremonial quality, start with the Everyday Blend.
Start with Samidori: bright, sweet and creamy, the most universally loved first cultivar and the best in cold lattes. Once you know it, try Okumidori for the opposite end: deep, robust and umami-forward. Tasting those two side by side as usucha is the fastest way to understand how much cultivar changes the cup.
They're three separate products. Samidori Cultivar is non-organic, the creamy-sweet cold-latte favourite. Organic Saemidori Cultivar is the certified-organic single cultivar with its own bright, gently sweet character. Pinnacle Grade Organic is a separate, more refined certified-organic premium ceremonial, not the same as either.
